
Ham and pineapple mingle with pepper, onion and cilantro in a flour tortilla. It is an explosion of sweet, salty and spicy.
Serves 4
2 ounces onion
8 stalks fresh cilantro
4 ounces poblano pepper
1 tablespoon olive oil
1 dash cumin
1 pound ham
1 cup pineapple tidbits canned in juice (undrained)
8 flour tortillas (soft taco size)
8 slices tomato

Directions
- Chop onion, cilantro and pepper and place in a skillet with oil. Turn heat on to medium.
- Sprinkle cumin over vegetables and stir. Chop ham into chunks and add to skillet.
- Continue cooking and stirring until ham is beginning to brown. Add pineapple and let everything simmer until most of the pineapple juice has been absorbed. Stir often.
- Spoon ham mixture into flour tortillas, fold and serve with tomato slices.
