Mix ¼ cup of butter with brown sugar in a deep bowl.

Roll out the croissant dough with a rolling pin in the form of a large rectangle (its length = circumference of the circular mold used), then brush the rectangle with a spoon of butter.
Distribute the butter and nuts mixture evenly over the center of the rectangle, and roll the dough around the mixture in a cylindrical shape.
Grease the mold with butter, then sprinkle with cinnamon and brown sugar, put the dough roller inside the mold and close the ends well.
Leave to ferment in a warm place for 30 minutes or until doubled in size.
- Preheat the oven to 180 degrees Celsius.
Brush the croissants with the remaining butter and sprinkle the surface with a little cinnamon.
Bake in the oven for 25 minutes or until all the bread is done.
